National dish of Ossetia. Ossetian pie prepare with different fillings (with potatoes, with meat, with cheese). We will prepare one of the most common recipes, with cheese, green onions and beet leaves. Can be attributed to vegetarian dishes. So we will need.
Ingredients for the dough:
- flour – 300 g;
- milk – 100 ml;
- water – 100 ml;
- butter – 30 g;
- yeast, fresh – 10 g;
- sugar – 1 tsp;
- salt to taste.
We cook the dough
Mix milk with warm water, add salt, sugar and yeast. Stirring.
Sift the flour, add the melted butter, knead the soft dough. Set aside for 40-50 minutes, until readiness.
While the dough is infused, prepare the filling.
Ingredients for filling:
- beet leaves – 300 g;
- adyghe cheese – 200 g;
- onion green – 100 g;
- melted butter – 1,5 tbsp;
- salt to taste;
- black pepper to taste;
Cooking stuffing
Beetroot leaves are well rinsed and dried. Cut off the stems and discard them, they will not be useful. Cut the leaves into strips. Chop the green onions.
Cheese can be rubbed on a large grater or kneaded with a fork. Mix beetroot leaves, spring onions and cheese. Salt only before we make a pie, otherwise the filling will give juice that will interfere.
The dough is ready, it’s time to make the pie.
Roll out the dough about 10 mm thick.
We spread the stuffing.
Pull the dough from the edges to the center, connect and secure it.
Turn over and put on a baking sheet. Do not forget to make a hole in the center to let out air and steam. You can sprinkle with sesame seeds.
Bake for 20-30 minutes in the oven, heated to 200 degrees.
Ready Ossetian pie to grease with oil. It is very tender and delicious!
