Kololik is essentially a soup with meatballs. However, the composition of its products, taste and technology, this dish is very different from European soups. Like many Armenian dishes, the kololik has several varieties, differing in the degree of complexity of cooking. The easiest in this respect is the ordinary kololik, the most complex, labor-intensive – the kololik shushinskiy.
Armenian cuisine is famous for its exceptionally nutritious dishes, the beauty of their decoration and delicious taste. Taking their origin in the depths of centuries, all these recipes have been preserved almost in a pristine, unchanged form. One of these recipes can be called the widely known “Kololik” soup, which is prepared from the most delicious portion of mutton – the back leg. This soup is so nutritious that one dish of this soup is enough to sustain the strength for a whole day.
Ingredients:
- mutton 500-600 grams;
- onion 3 pcs.;
- potatoes 4-6 pieces.;
- semolina 3 tbsp.;
- rice 3 tablespoons.;
- eggs 2 pieces.;
- tomato paste 50g;
- parsley 1/2 of the beam;
- cilantro 1/2 of the beam;
- basil 3 sprigs;
- vegetable oil 2 tbsp.;
- salt, pepper to taste.
How to cook Kololik
Wash meat, pour water and bring to a boil. Remove foam, salt and cook on low heat 1-1,5 hours.
In the meantime, we are preparing the filling for our meatballs. Cook rice, fry onions in vegetable oil. Wash greens, dry and finely chop. Mix rice, onions and half of our greens. Solt and pepper to taste.
We take the meat from the broth and cool it. Broth filter. We make minced meat, add eggs and semolina to it. Stir a couple of minutes.
We begin to prepare meatballs with stuffing. We spread the mince in the form of a pancake. We put stuffing on the meat pancake. We wrap the meatball so that the whole filling is inside.
You should get such meatballs the size of a chicken egg.
Now we clean and cut potatoes. Bring the broth to a boil. We lower into it potatoes, meatballs, tomato paste. Once again bring to a boil and cook over medium heat for 15 minutes (during this time must cook potatoes).
Add the remaining greens and soup is ready!
