Kuchmachi – an unusually tasty and nutritious dish, which is quickly and easily prepared at home. Its basis is the offal, in our case – chicken hearts and liver.

It is not difficult to prepare kuchmachi from chicken giblets. Do not get lost in the processes you will help our detailed recipe with the photo. If everything is done correctly, the traditional Georgian snack will turn out to be very delicate, piquant and fragrant. It’s not for nothing that they say that if someone does not like Georgian cuisine, give him kuchmachi – and he immediately changes his mind.

Kuchmachi is the colorful, incredibly aromatic Caucasian dish, which is traditionally prepared from offal, with a lot of seasonings, greens, garlic and, of course, with pomegranate seeds, which in Georgia they like to add to almost all dishes. This recipe is made from chicken giblets with red wine.

  • chicken hearts – 400 g;
  • chicken liver – 400 g;
  • onion – 4 pcs;
  • garlic – 4 cloves;
  • red dry wine – 100 ml;
  • pomegranate – 1 pc average:
  • cilantro – 1 bunch;
  • vegetable oil;
  • coriander grains – 1 tsp;
  • salt;
  • black pepper ground;
  • hops-suneli.

How to cook kuchmachi

We prepare all the necessary ingredients. Put the pomegranate fruit in the refrigerator.

Chicken giblets, cleaned from tape and cut into small pieces. We shred onion finely.

Giblets are put in a frying pan, salt, pepper and fry on high heat, adding two tablespoons of vegetable oil.

Mix 100 ml of water and 50 ml of wine. After 5-7 minutes, pour in this cocktail, reduce the fire to a small one and cook the dish on before liquid evaporation.

In a separate frying pan fry the chopped onions. On high fire it takes about 4 minutes.

We clean and grind garlic, add spices to it and rub it all together until we get a gruel. This gruel is mixed with 50 ml of wine.

Add the fried onions and wine-garlic-spicy mixture to the stewed chicken giblets, mix everything and hold on high fire for about 6 minutes.

From the refrigerator we take out a pomegranate and carefully extract the seeds from it. My and finely cut cilantro. We decorate the prepared dish with pomegranate seeds and chopped greens.

Kuchmachi is ready

The delicious Georgian dish of Kuchmachi is ready. Snack can be safely put on the table. Believe me, everyone will be delighted with her.
